A Few Tips for the Best Rocky Road

Let the chocolate cool slightly. Once you’ve melted your chocolate, let it cool to around room temperature before mixing it through the fillings. This helps prevent the marshmallows from melting.

Make it your own! I’ve shared the exact measurements I used, but rocky road is one of those recipes you can have a little fun with. Prefer dark chocolate? Go for it! Want to use larger mince pies or a mix of pink and white marshmallows? Absolutely!

How to store your rocky road: Store in an airtight container between layers of baking paper. I keep mine in the fridge, especially during the warmer months, and I LOVE the texture when it’s chilled.

The Ultimate Christmas Rocky Road

This easy Mince Pie Rocky Road is packed with mini fruit mince pies, red liquorice, fluffy marshmallows and Terry's Chocolate Orange, all coated in creamy milk chocolate. It's the ultimate festive treat and makes a gorgeous homemade Christmas gift! No baking required, and you can easily customise the fillings to suit your tastes.
Prep Time 15 minutes
chilling time 2 hours
Course Baking, Dessert

Ingredients

  • 9 mini fruit mince pies I bought a packet of 9 mini pies but you use 4 or 5 larger ones
  • 150 g red licorice
  • 75 g white mini marshmallows*
  • 1 Terry’s chocolate orange
  • 500 g good quality milk chocolate

Instructions

  • Roughly chop the mince pies, red licorice and Terry’s chocolate orange. Add into a large mixing bowl along with the mini marshmallows. Stir to mix together.
  • Roughly chop the milk chocolate and place approximately 3/4 into a heatproof bowl. Melt the chocolate over a bain-maire or in the microwave in short bursts, mixing regularly until melted. Remove from the heat and stir in the remainder of the chocolate until melted. Allow to cool slightly, to around room temperature then pour into the mince pie mixture. Gently stir until well coated.
  • Pour the mixture into a baking tin/dish lined with baking paper and use an offset spatular or the back of a spoon to evenly press it into the tin (I used a 23cm x 28cm tin)
  • Ideally you’ll allow it set at room temperate but if you’re impatient like me you can pop it into the fridge to set then cut into pieces and enjoy!
  • Store in an airtight container in between sheets of baking paper. I store mine in the fridge because it has been SO hot lately and I also love the texture of all the elements when it’s chilled.

Notes

* I literally sat and ate all the pink ones because personally I feel like the white ones look better in rocky road but you can totally use both the pink and white ones if you like!
